Oats and Coconut Spice Cookies! Healthy Magic 🙂

Sorry this caption sounds like a Maggie Noodles ad.

Being a Foodie family has its advantages. Food gets attention and any new trial gets a detailed review :-). The flip side though is that this review is NOT ALWAYS POSITIVE :-(. So, it has been my endeavour to produce Healthy yet tasty food most times.

Though, I must admit that I sometimes cheat in this endeavour, when I put APF instead of whole wheat or Multi Grain Flour just because the family somehow likes it more in terms of the texture of the finished product! There…I have admitted to this.

Anyways, this particular recipe is a very simple, healthy and hassle free way to get children to consume coconut,honey and OATS!! It tastes a bit like anzac cookies and the kids and husband just love it. This cookie is just how a true cookie should taste, crisp on the edges and outside and nice a chewy on the inside. So here goes.

All Stacked Up to be Eaten!

Recipe Source-“Eggless Baking” book by Mrs Indira kakati(1988)

Ingredients-

Oats(Any variety)-1 Cup
Brown Sugar-3/4 Cup
APF-3/4 Cup
Dessicated coconut(unsweetened)-3/4 Cup
Nutralite-1/4 Cup
Honey-2TBSP
Baking Soda-1.5 tsp
Water-3TBSP(really warm)
Nutmeg Powder-1/4 tsp
Cardamom Powder-1/4 tsp

Method:

-Mix all the Dry Ingredients well in a Bowl.(APF,Nutmeg,Cardamom,sugar and coconut and offcourse the OATS)
-Microwave the Nutralite on high power for 35 seconds. Add the honey and stir well.
-Dissolve the baking soda in the warm water and add it to the honey-butter mixture and stir well.
-Now add the liquid ingredients to the dry ingredients and in the bowl and mix well to form a firm dough. It actually looks like coconut laddoo dough .The dough will be a bit dry.
-Take about a tbsp of dough and roll it into a ball and flatten well with your hand .
– If your dough is sticky, add a little more flour, and if it is too dry, add just a bit of water to get the right dough consistency.(Do not add a lot of flour though, just a tsp at a time)

-Place the flattened biscuits on aluminum foil wrapped tray and bake at 160 C for about 15 minutes till they look dry and brown. Mine took 18 minutes. These biscuits tend to brown. Do check on them after 10 minutes of baking to ensure they don’t burn. I like mine only slightly brown on the edges and paler on the centre.

-At this point the biscuits will be very soft. Let them cool on the tray for about 10 minutes, then remove them and allow to cool completely on a wire rack.
